This 100% Pedro Ximenez was grown in one of the highest-altitude wineries on Earth, at a height of 6,320 feet. The result is a stylish white wine with appealing floral and fruit aromas, balanced acidity and a great finish.

• After being hand-harvested and softly de-stemmed, the wine is aged on the lees with batonnage.
• The Pedro Ximenez grapes at Mayu winery used to be harvested for making Chilean pisco, but family members convinced them to start making a dry white wine with the grapes instead.
• Pedro Ximenez grapes are normally very susceptible to botrytis & downy mildew, making it the perfect grape to grow in the dry desert of Chile.
